Abstract

The grated coconut was dried by different methods of drying viz., sun, microwave and hot air oven (50°C). The quality parameters viz., colour, moisture, protein, fat, peroxide value, free fatty acid and organoleptic values were assessed. Based on the results, it was found that microwave oven drying was recorded as best method of drying to get good quality desiccated coconut which may be helpful to strengthen coconut industry in India and export value of value-added products of coconut.
